Black Bean Burger with Spicy Cabbage Slaw

By: Sarah Heckler, MS, RD, LDN, CISSN

I love having vegetarian “burger” options but a lot of commercially prepared patties are full of added fillers so I set out to create a black bean burger at home that did not require a lot of effort. So here it is, enjoy!

Instructions
  1. Drain and rinse the black beans and place in a mixing bowl.
  2. Mash beans to desired consistency. I did not mash mine completely because I like more texture to my burger.
  3. Once beans are mashed, add in yellow onion, breadcrumbs, egg, garlic powder, salt and pepper. Stir to combine.
  4. Once combined, portion patties to desired size, I made 4 large burgers but you could make smaller ones or even bite size appetizers).
  5. Once portioned, heat a skillet on medium heat and add butter once hot.
  6. Place each patty in the skillet and cook until golden brown on each side and heated through. I used butter because it created the golden, crisp texture that I like but you could use any oil of your choosing.
  7. While patties are cooking, in another mixing bowl combine lime juice, sugar and Sriracha. Once mixed, add in cabbage and stir to coat evenly.
  8. After patties are done cooking, remove from the stove and tip with sliced avocado and spicy cabbage slaw.
