This recipe is a great way to incorporate more plant proteins into your diet and is a great way to lighten up your favorite comfort food dishes. This chili is completely meat free but still packs a lot of flavor!

Instructions
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the sweet potatoes and onion and cook for about 5 minutes.
  3. Add in garlic, chili powder, chipotle powder, salt and pepper.
  4. Add the stock, tomatoes, black beans and quinoa and bring to a boil. Stir everything to combine.
  5. Reduce heat to a simmer and cover the pot. Cook for 45-60 minutes or until quinoa is fully cooked and sweet potatoes are soft.
  6. Add the lime juice and remove the pot from heat.
  7. Garnish with avocado.
