Ingredients

For the Chickpeas

  • 15 ounces Chickpeas rinsed and drained
  • Salt and pepper to taste

For the Fried Eggs

  • 3 each eggs
  • 1 tbsp olive oil
  • Salt and pepper to taste

For the Pizza

  • 1 each whole wheat pizza crust
  • 1/3 cup pizza sauce
  • 1/4 cup mozarella cheese
  • 1/4 cup roasted chickpeas
  • 1 cup mixed greens
  • 3 each fried eggs
  • Sriracha to taste
  • 1 tsp ranch dressing

Instructions

For the chickpeas

  • Preheat oven to 400 degrees F. While oven is preheating, lay chickpeas out on a towel to air dry.
  • Once oven is preheated, toss chickpeas in salt & pepper to taste and place on a baking sheet.
  • Roast chickpeas for 20 minutes or until crunchy. Remove from oven and set aside.

For the pizza.

  • Preheat oven to 350 degrees F. While oven is preheating, assemble pizza by spreading sauce and cheese on crust.
  • Once oven is preheated, bake pizza until crust is crisp and cheese has melted, about 10 minutes.
  • While pizza is baking, place a skillet on the stove on medium heat to cook the eggs.
  • Once skillet is heated, drizzle olive oil to coat the pan. Once oil has been heated, add eggs , season with salt and pepper and cook to preference (i.e. sunny side up, hard fried, etc.)
  • When pizza is done cooking, remove from the oven and top with chickpeas, mixed greens and fried eggs.
  • Drizzle with sriracha and ranch and enjoy.
