Decadent Chocolate Mousse

Ingredients

  • 2 avocados ripe, peeled, pitted
  • 1/4 cup cocoa powder Ghirardelli, or your favorite
  • 5 tbsp unsweetened coconut milk Silk
  • 1/4 cup raw honey
  • 1/8 tsp salt
  • 1.5 tsp vanilla extract
  • 1/4 cup semisweet chocolate chips or chopped dark chocolate

Instructions

  • Combine first 3 ingredients in food processor and blend till smooth and creamy, scraping sides as needed to ensure smooth consistency. Add remaining ingredients EXCEPT chocolate chips. Blend till smooth.
  • Pour chocolate chips into microwave safe bowl, add 1 tsp. coconut milk. Microwave in 20 second increments, stirring in-between, until chocolate is melted. Pour into avocado mixture and blend to integrate.
  • Pour into 2 large ramekins, or 4 small ramekins. Refrigerate 4 hours for best, thickest, decadent consistency.
