Ingredients

  • 6 eggs yolks and whites separated
  • 2 cups almond flour
  • 1 T maple syrup or honey
  • 1/4 tsp salt
  • 1/2 cup coconut milk canned
  • coconut oil or butter, for greasing the waffle iron

Instructions

  • Separate the egg yolks from the egg whites using your hand, the shell of the egg, or an egg separator. Put the egg whites in a separate, clean bowl.
  • In another bowl, I mixed the maple syrup, coconut milk, egg yolks, and almond flour together in a bowl.
  • Whip the egg whites in a clean bowl using a stand mixer or hand mixer (or get a nice workout with your arm) until they form stiff peaks (they will stand up on your beater).
  • Gently fold the egg whites into the rest of your batter.
  • Pour the batter into your waffle maker, cook to the desired doneness, top as desired and enjoy.
