Separate the egg yolks from the egg whites using your hand, the shell of the egg, or an egg separator. Put the egg whites in a separate, clean bowl.
In another bowl, I mixed the maple syrup, coconut milk, egg yolks, and almond flour together in a bowl.
Whip the egg whites in a clean bowl using a stand mixer or hand mixer (or get a nice workout with your arm) until they form stiff peaks (they will stand up on your beater).
Gently fold the egg whites into the rest of your batter.
Pour the batter into your waffle maker, cook to the desired doneness, top as desired and enjoy.
