Ingredients

  • 1/3 cup brown rice cooked
  • 1/4 cup Sweet Potatoes roasted
  • 1 teaspoon olive oil for roasting sweet potatoes
  • Salt and pepper to taste
  • 1/2 each Avocado sliced
  • 1/4 cup mango cubed
  • 1 sheet nori
  • Sesame seeds to garnish
  • spicy mayo or yum yum sauce

Instructions

  • Cook rice according to package directions.
  • Preheat oven to 350 degrees F.
  • While oven is preheating, wash, peel and cut sweet potatoes into cubes. Drizzle olive oil over potatoes and season with salt and pepper.
  • When oven is preheated, place potatoes on a baking sheet and in the oven for 30 minutes or until potatoes are soft.
  • While the potatoes are cooking prepare the other ingredients. Slice the avocado, mango, and nori. Set aside.
  • If edamame is frozen, cook according to package directions. If already cooked, set aside with the rest of the ingredients.
  • Once potatoes are done, remove them from the oven.
  • Once everything is cooked, place everything in a bowl and top it with sesame seeds and spicy mayo/yum yum sauce.
