Cook rice according to package directions.
Preheat oven to 350 degrees F.
While oven is preheating, wash, peel and cut sweet potatoes into cubes. Drizzle olive oil over potatoes and season with salt and pepper.
When oven is preheated, place potatoes on a baking sheet and in the oven for 30 minutes or until potatoes are soft.
While the potatoes are cooking prepare the other ingredients. Slice the avocado, mango, and nori. Set aside.
If edamame is frozen, cook according to package directions. If already cooked, set aside with the rest of the ingredients.
Once potatoes are done, remove them from the oven.
Once everything is cooked, place everything in a bowl and top it with sesame seeds and spicy mayo/yum yum sauce.
