In sauce pan heat olive oil over medium heat.
Once oil is heated, add garlic and cook for 1-2 minutes.
Add the remaining broth ingredients and cook until heated throughout.
While broth is heating, add water to another pot and boil.
Once boiling, add edamame and cook for 4 minutes.
While edamame is cooking, slice bell pepper, chop green onion and peel carrot. Set aside for later.
When edamame is done cooking, remove from stove and drain.
Rinse pot and fill with 3/4 of the way with water. Place pot on the stove and boil water.
Once water is boiling, add half of the rice noodles and cook for 3 minutes.
When rice noodles are done cooking, remove from the stove and drain.
Assemble your bowl by placing the rice noodles in first, then the bell pepper, carrot and edamame. Sprinkle green onions on top and pour your broth into your bowl.
