Black Bean Burger with Spicy Cabbage Slaw

Ingredients

For the burger

  • 2 cans Black beans rinsed and drained
  • 1/2 each Yellow onion diced
  • 1/2 cup Breadcrumbs
  • 1 each egg
  • pinch garlic powder
  • 1/8 tsp salt
  • 1/8 tsp black pepper
  • 2 tbsp Butter or oil of choice
  • 1/2 each Avocado

For the Slaw

  • 2 tbsp lime juice
  • 1 tbsp Sriracha
  • pinch sugar
  • 1 cup Shredded red and green cabbage with carrots

Instructions

  • Drain and rinse the black beans and place in a mixing bowl.
  • Mash beans to desired consistency. I did not mash mine completely because I like more texture to my burger.
  • Once beans are mashed, add in yellow onion, breadcrumbs, egg, garlic powder, salt and pepper. Stir to combine.
  • Once combined, portion patties to desired size, I made 4 large burgers but you could make smaller ones or even bite size appetizers).
  • Once portioned, heat a skillet on medium heat and add butter once hot.
  • Place each patty in the skillet and cook until golden brown on each side and heated through. I used butter because it created the golden, crisp texture that I like but you could use any oil of your choosing.
  • While patties are cooking, in another mixing bowl combine lime juice, sugar and Sriracha. Once mixed, add in cabbage and stir to coat evenly.
  • After patties are done cooking, remove from the stove and tip with sliced avocado and spicy cabbage slaw.
