Zucchini Bread Overnight Oats

Ingredients

  • 2 T sunflower butter or nut butter of choice
  • 1/2 cup milk of your choice (whole diary, in this case)
  • 1/2 scoop protein powder optional
  • 1/4 tsp vanilla extract
  • 1 tsp cinnamon
  • pinch salt
  • 1/4 cup rolled oats
  • 1/4 cup zucchini shredded
  • 1 T raisins

Instructions

  • Stir nut or seed butter with milk, protein powder (if using). vanilla, cinnamon and salt in a mason jar or bowl. Add the oats, zucchini, and raisins ensuring they are all immersed in the liquid. Cover and place in the fridge overnight or for up to 3 days. Add sweetener if desired. Consume cold or reheat and enjoy warm.
