3 Ingredient Chocolate Protein Pancakes

August 1, 2018/in Breakfast, Recipes

By: Sarah Heckler, MS, RD/LDN, CISSN

Who doesn’t love pancakes? This recipe was a product of a craving. One night a week or so ago I was craving sweets, yes Dietitians get these cravings too! I really wanted pancakes but also wanted to make sure that I reached my protein goal for that meal and right then and there the 3 ingredient protein pancake was born. I hope you enjoy these as much as I did.

Ingredients

Pancake Mix

  • 1 banana
  • 2 eggs
  • 1 scoop chocolate whey protein powder

Toppings (optional

  • 1-2 tablespoons peanut butter
  • 1 tablespoon maple syrup
  • 1 ounce granola
  • 1/2 banana sliced

Instructions

  • Mash the banana and combine with the two eggs. Stir to combine.
  • Add in protein powder.
  • Heat a skillet to medium heat and add in pancake batter. You can make them any size you'd like. I used my 1/4 cup measuring cup to portion my pancakes out.
  • Cook each side of the pancake for a few minutes or until golden brown.
  • Once pancakes are cooked, remove from heat and add your desired toppings. For this meal I topped my pancakes with peanut butter, banana, granola and maple syrup.
