Sweet Potato Crispy Cubes

Who doesn’t love sweet potatoes?!

They are a favorite around our office and The Fueling Edge Kitchen. But sweet potatoes don’t just have to be baked, they can be roasted into this delicious and savory side dish.

Why not give it a shot for dinner this week?

Sweet Potato Crispy Cubes

Ingredients

  • 3-4 each Sweet potatoes washed, cubed
  • 3-4 cloves Garlic minced
  • 1 tbsp Rosemary
  • 1 tbsp Oregano
  • 2 tbsp Extra virgin olive oil
  • salt & pepper to taste

Instructions

  • Preheat oven to 425 degrees FCut sweet potatoes into small cubes (about ¼"x1/4"x1/4")
  • Toss in 1  tbsp olive oil
  • Sprinkle with salt and pepper as desired
  • Roast in oven for ~20 minutes, flip potatoes & roast for another ~20 minutes. (Time may vary based on your oven. You want the potatoes to be browning and forming a slight "crust")
  • With about 5 minutes left on the time potatoes are in the oven, put a large pan on the stove at low-medium heat. Add the olive oil, minced garlic, rosemary, & oregano. Stir occasionally to ensure spices don't burn.
  • When potatoes come out of the oven, add them to the pan and turn the stove up to medium heat.
  • Continue stirring until potatoes are coated in spices & have formed a semi-firm crust.
