Bell Pepper Nachos

The Super Bowl is just around the corner. Did you know the average American consumes nearly 2400 calories on on Super Bowl Sunday? WOW. How about serving some healthier versions of those traditional calorie-laden football snacks? Here’s the perfect example of a recipe makeover for nachos.

What’s the secret ingredient? Bell peppers.

And guess what? Bell peppers pack a nutritional punch!

Add some protein from your ground turkey (or grass-fed beef or chicken) and some fat from the cheese, olives and sour cream (or greek yogurt) and you’ve got yourself a great appetizer for the Super Bowl or a healthy meal. Enjoy!

Bell Pepper Nachos

Ingredients

  • 3 bell peppers
  • 1/2 lb ground turkey or grass-fed beef or chicken
  • 1/2 packet taco seasoning
  • 1/2 cup shredded cheese
  • 1/2 cup shredded lettuce
  • 1/4 cup diced tomatoes
  • 1/4 cup black olives
  • 1/4 cup guacamole
  • 2 T sour cream
  • sliced jalapenos
  • salsa for dipping or topping

Instructions

  • Cook the ground turkey with taco seasoning while you prepare the bell pepper “chips”. You will want to slice the bell peppers into triangle type shapes replicating tortilla chips.
  • Arrange the “chips” on a plate.

  • Add ground turkey taco meat.
  • While it’s still hot add the shredded cheese so that it can have a chance to melt a bit.
  • Add your shredded lettuce, diced tomatoes, black olives, guacamole, sour cream, jalapenos and salsa and enjoy!
