Stuffed Sweet Potato

It’s no secret that I love sweet potatoes and I am always trying to find new ways to enjoy them. I typically like my sweet potatoes in savory dishes but I decided to try something new. This dish makes for a great breakfast or snack, if split in half.

Stuffed Sweet Potato

Cook Time 5 minutes minutes

Ingredients

  • 1 Medium Sweet Potato baked
  • 2 Tbsp peanut butter
  • 1 Small banana sliced
  • 2 Tbsp chia seeds

Instructions

  • Wash, dry and pierce the sweet potato with a fork.
  • Bake the sweet potato either in the oven or the microwave. The oven will take longer however, the sweet potato will get sweeter.
  • Once done baking, remove from the oven and cut in half. Lightly mash the inside of each half.
  • Top each half with peanut butter, sliced banana and chia seeds.
