Vegetarian Pho

Vegetarian Pho

Ingredients

For the broth

  • 1 tbsp olive oil
  • 1 clove garlic ,minced
  • 4 cups Vegetable stock
  • 3 tbsp Sriracha (can use more or less depending on how spicy you like it)
  • 1/2 cup Soy sauce or soy aminos

For the bowl

  • 1/2 package Rice Noodles (I used the brand above but you can use any brand)
  • 2 large Carrots ,peeled (keep peels for inside the bowl)
  • 1 each Red Bell Pepper
  • 1/4 cup Green Onions ,choppped

Instructions

  • In sauce pan heat olive oil over medium heat.
  • Once oil is heated, add garlic and cook for 1-2 minutes.
  • Add the remaining broth ingredients and cook until heated throughout.
  • While broth is heating, add water to another pot and boil.
  • Once boiling, add edamame and cook for 4 minutes.
  • While edamame is cooking, slice bell pepper, chop green onion and peel carrot. Set aside for later.
  • When edamame is done cooking, remove from stove and drain.
  • Rinse pot and fill with 3/4 of the way with water. Place pot on the stove and boil water.
  • Once water is boiling, add half of the rice noodles and cook for 3 minutes.
  • When rice noodles are done cooking, remove from the stove and drain.
  • Assemble your bowl by placing the rice noodles in first, then the bell pepper, carrot and edamame. Sprinkle green onions on top and pour your broth into your bowl.
