ColorFuel Plate

This recipe is a great way to get in your daily dose of colorfuel. For more protein and omega-3s, pair this salad with a nice piece of salmon.

Ingredients

  • 1 cup Spinach or Mixed Greens
  • 1/4 cup bell peppers , sliced
  • 1/4 cup Red Cabbage , shredded
  • 1/4 cup Butternut Squash noodles/strings
  • 1/4 cup Chickpeas , dried (you can make your own or use store bought ones for ease of conveince)

Instructions

  • Throw all your ingredients on a plate or in a bowl and enjoy!
